Coconut Banana Fritters

3 ripe bananas, roughly chopped
2 cups all purpose flour
1 egg
1 tsp. vanilla extract
2 tbsp. sugar
1 tbsp. baking powder
½ cup corn starch
Pinch of salt
½ cup canned coconut milk
Cooking oil, for frying
Confectioner’s sugar, for dusting

Fill a high sided skillet with cooking oil over medium heat. In a bowl, whisk together the flour, egg, vanilla, sugar, baking powder, salt, coconut milk, and corn starch. Add the chopped bananas and mash with a potato masher. When the skillet is hot, use a ice cream scoop or cookie scoop to place the batter into the hot oil. To avoid the hot oil from splashing on you, lay down your scooper close to the oil while releasing the batter. Fry until deep golden brown, turning as needed. Remove the fritters and place on a towel to absorb oil. Dust with powdered sugar before serving.
