Trini Style Corn Pie
1 cup fine cornmeal or pre-cooked corn masa
1 can cream style corn
1 can whole kernel corn (drained)
1 medium onion diced
1 large bell pepper diced (red and/or green)
2 pimento/jalapeno peppers diced
2 cups cubed cheddar cheese
3/4 – 1 cup evaporated milk
1/2 tsp salt
1 tsp sugar
1/2 tsp white pepper (or to taste)
1 cup melted butter
Preheat oven at 325 degrees F.
Grease baking dish and set aside.
Melt butter in a saucepan or microwave.
Mix all dry ingredients thoroughly into a large bowl, then add liquid ingredients and melted butter gradually.
Transfer mixture into greased dish, grated cheese can be used to top (optional).
Bake at 325 degrees F for 30-45 mins (until golden brown and cheese is bubbling).
Allow to cool, then serve.
Tips: Bacon, smoked-sausage or prosciutto can be added to the raw mixture.
Parsley flakes can be used to garnish after baking.
