Tiger nut milk (kunun aya)

200 grams Tiger nuts
600 to 700ml cold water
1 teaspoon grated ginger
Honey or sugar (add to taste)
Coconut and dates


If you are using dried tiger nuts, wash and soak in water for 24 hours until the nuts are well hydrated (change the water from time to time, so that it doesn’t ferment). If you’re using fresh tiger nuts, skip the soaking process. Pour out the water, rinse the nuts and place in a blender. Add the ginger, coconut, dates and the cold water and blend thoroughly. Pour through a sieve with a tight mesh and let the milk strain out. Add honey or sugar to taste and chill in the refrigerator.
